One for the ladies! I have permission to say this as James has a longterm parter and beautiful son plus as everyone knows I’m a married woman with two beautiful daughters!
Introducing James
The exceptionally talented James is from Auckland New Zealand. He is head chef of Crave Cafe (a very busy but cool cafe and bistro – full of his female fans – you can imagine how stressful this mans life is lol!)
With a commitment to using fresh seasonal ingredients he cooks with a lot of herbs and anything plant-based. He also enjoys the challenge of cooking for people with dietary requirements eg Vegan, GF, DF, and vegetarian. Keep an eye on this man!
Bircher Recipe:
Bircher is a soaked oat muesli that is super healthy and simple to prepare at home (night before).

2 cups rolled oats
2tbsp chia seeds
4 x green eating apples peeled and diced
250 ml coconut cream
500ml almond milk
500ml apple juice
2tbsp lemon juice
100g dried goji berries
100g dried cranberries
1/4 tbsp cinnamon
Method:
- Mix together all wet ingredients with peeled diced apple, oats and chia seeds. Allow the mixture to soak for 4 hours.
- Mix remaining ingredients together and let sit in refrigerator for 6 hours or uptown 24 hours before serving.

It’s a typical breakfast or any day food in Switzerland actually but it has a lot of fruits on it plus of course the muesli itself. Good to know they do it there now but in different style.
