Easy Lamb Chop Casserole.
If you’re busy looking after small children all day and need a simple one pot dish for supper then my easy lamb chop casserole might just be what you’re looking for.
This is the easiest casserole I’ve ever made and you don’t even need a slow cooker. A family friendly dinner packed with taste.
The tender lamb chops pair nicely with the flavours from the french onion soup, chopped tomatoes and dried oregano. A hearty, warming dish to see you through the Autumn.

Serves 2
Ingredients
4 lamb chops
1 tin french onion soup
1 tin chopped tomatoes
1 courgette sliced and quartered
4 mushrooms chopped
1 red pepper chopped
1 tsp dried oregano
1 bay leaf
1 clove garlic finely chopped

A healthy dish your friends and family will love.
Preparation Method:
- Place all the ingredients in a casserole dish or creuset dish and cook on 170C fan 180C conventional oven for 1 hour.
- Serve with mashed swede and broccoli.
