Quick Thai Green Curry.

Try my easy time-saving recipe for the ever popular Thai green chicken curry. Green curry chicken is an excellent source of protein, iron and Vitamin A.  The perfect spicy comforter for the winter weather.

Ingredients :

200 ml carton coconut cream

3tbsp Thai green curry paste

2tbsp honey

Juice of 1 lime

450g chicken thighs (skinned and cut into cubes)

8 green beans chopped

1 red chilli thinly sliced.

Sticky rice to serve.


Preparation Method :

  1. Pour the coconut cream into a dish.  Add the green curry paste, honey and lime juice and mix well.  Add the diced chicken, toss well and set aside for 15 minutes.
  2. Transfer to a saucepan, add the chili and green beans and gently simmer for 12-15 minutes, until the chicken is cooked through and the sauce has thickened slightly.
  3. Serve with sticky rice.
