This is a fantastic recipe for anyone looking to lose a few pounds ready for summer. Although it’s technically a fruit, the mild-flavoured avocado is used as a vegetable. Native to central America the avocado is highly nutritious, containing vitamin E, iron, potassium and niacin. It is also unique among fruits as it contains oil – but most of it is the good mono saturated type.
At first I did think maybe avocado toast was too, easy too simple a post, but this recipe is so delicious and so healthy that I couldn’t resist sharing it with everyone. The beauty of this recipe is the simplicity. In five minutes flat you can have a mouth-watering meal that can be served any time of the day.
Both creamy and crunchy and satisfying and filling you will not disappoint family and friends with this recipe. In a perfect world I would have this for lunch everyday.
The monounsaturated (good) fats in avocados help keep the receptors in the brain sensitive to serotonin boosting mood. These same fats will help lower blood pressure another key to feeling relaxed.
So this recipe is win win all round. Loose weight, improve your physical health and boost your mood and energy levels ready for summer.
Serves 2
Ingredients:
1 Avocado
8-10 cherry tomatoes
2-3 sprigs of fresh basil
Dash Worcester sauce
Two slices of granary/seeded bread
Preparation Method:
1) Halve an avocado with a knife and scoop out the flesh into a bowl.
2) Mash the avocado with a fork.
3) Chop cherry tomatoes into quarters and add to mashed avocado.
4) Chop basil and add to avocado.
5) Add a dash of Worcester sauce and mix thoroughly.
6) Prepare a slice of granary toast and spoon avocado mixture on top.
7) Serve for a healthy breakfast, lunch, dinner. or snack. Delicious!

Miles has been doing his best grumpy cat face since Toby has been staying with us. My mum and dad are on holiday so we are dog sitting. Toby is very loving and has a laid back personality so we really enjoy looking after him. He is very happy today because the sun is shining for once in the U.K so we are having a BBQ. Emma xx
I love avocado on toast. I especially like having it for breakfast as I find it an easy way so get one of my five a day servings in. I may have to up the ante on the five day as I have seen a number of articles recently suggesting five a day should be seven or even ten a day. Help! 😉
